Bounty

My accomplishment for the day was getting out of the house by 8am to do my major shopping, and making it back home by 10:15.  Could NOT have done it without my two eldest daughters.

I admit to going slightly berserk in the produce department… but that is a good kind of berserk, don’t you think?  Supper tonight consisted of a pot of  soup made by layering:

  • red garnet yam, thinly sliced
  • zucchini, thinly sliced
  • green onions, thinly sliced
  • red bell peppers, cut in strips
  • frozen green beans (these were the only vegetable that wasn’t fresh)
  • garlic, minced
  • butter, a few pats
  • forbidden rice (leftover from yesterday when I served it with curry)
  • seasonings:
    • finely ground black pepper
    • a few shakes of Cavenders
    • a few shakes of Old Bay
    • spicy paprika
    • smoked paprika
    • Jamaican allspice
    • ground nutmeg
  • boiled in water
  • add milk and a touch of flour for thickening
  • served with optional chopped avocado and crumbled Gorgonzola cheese

Could have been even better with some additional greens, (and maybe some crumbled bacon) which I’ll keep in mind for next time.  And there must be a next time!
