Today we were very blessed to celebrate Birthday #46 with my beloved husband, Paul. I wish that I had been well enough to start the day with Mass along with the rest of the family, but this doggone bronchitis is pernicious and wearying, and after years of experience with this battle, I know better than to inflict my coughing fits on the whole congregation.
Despite my woes, a splendid time was had by all. Pat and Fred joined us at home after church where Paul got to BBQ some of his famous chicken for us, accompanied by chips of two kinds, salsa, guacamole, blue cheese dip, French onion dip, some store-bought macaroni and potato salads, and my little gourmet addition to the day, an hors d’oeuvres made with whole grain crackers, topped with thinly sliced Parmesan cheese, a dollop of basil pesto, and crowned with halved grape tomatoes.
For the finale, we had what has become the traditional cake for Paul, white cake with vanilla mousse filling, butter cream frosting, and deocrated with a clown (from Costco). Ice cream optional. Wayyy too much food, but all kinds of fun.
