Nettie pulls a P.W.

Herein I shall attempt to wow my massive audience of a dozen or so fans with a stupidly simple yet darned tasty recipe, P.W. style.

Today I made homemade cream of tomato soup and got raves.  You will too.

P.S.  Not Diet Soup!

The cast of characters:

Begin by warming your Hunts Traditional Pasta sauce, 1 stick of butter, and 1 scant Tbsp. of sugar or Splenda in a heavy bottomed sauce pan.  Note:  Just warm it, do not boil or simmer.

As soon as the butter is melted, remove from heat and pour in the full can of evaporated milk.

Take your spoon and swirl the white milk into the red sauce.

Pause for a moment to appreciate your own artistry.

Finish stirring in the milk.  Return to the burner and warm just until steam rises from the top.

Serve in bowls with giant soup spoons, or slurp the steaming, decadently rich elixir from a mug.  It is a very sturdy, satisfying soup – even without a bread on the side, but for the perfect post-sledding (or snow-shoveling) meal, serve with your favorite grilled cheese sandwich.

  1. Oh my, that does look good! And you’re right, it’s definitely not a diet soup, not with all that yummy butter and milk!

    1. It’s so rich, it’s a little reminiscent of a tomato-y alfredo sauce! Like I say — great for after you’ve been out burning lots of winter calories! 😉

  2. This was SOOO good! It is Nettie’s version of a “less-rich” Cream of Tomato soup that I was suggesting to her….She NEVER does a recipe exactly as given!!!!! LOL This was amazing….!

    1. I suppose there might be a lighter way to do this — less butter, and evaporated skim milk… it’s worth a try! 🙂
