Summer Porridge

Thanks to my good friend Lauren for posting this link yesterday for Overnight, No-Cook Refrigerator Oatmeal.  Doesn’t it look interesting and tasty and too good not to try?  Especially in the summer time when nobody wants to stand in front of a hot stove.  The author at The Yummy Life discovered that this “summer porridge” has been around for a long time – which of course makes sense with such a good idea.  Nonetheless, I’m glad she found it and posted up such a thorough how-to.

Last night, Laurent put together a couple of Heidmann versions for us to try this morning – a double batch of Maple Blueberry, and a quadruple batch of Strawberry Coconut.

Maple Blueberry Refrigerator Oatmeal

1/2 cup uncooked steel cut oats
2/3 cup 1% milk
1/2 cup non-fat Greek Yogurt
1 1/2 tsp. ground flax seed
1 1/2 tsp. hemp seeds
4 tsp. maple syrup
1/2 cup blueberries

As you can see above, the blueberry version turned out a bit more runny – probably because of the syrup.  But it was tasty, to be sure.  However, the Strawberry Coconut was INCREDible.

Strawberry Coconut Refrigerator Oatmeal

1 cup uncooked steel cut oats
1 1/3 cup 1% milk
1 cup non-fat Greek Yogurt
3 tsp. ground flax seed
3 tsp. hemp seeds
2 cups strawberries, quartered
1/3 – 1/2 cup coconut

 

Even without added sweetener, this was somehow sweeter than the blueberry.  I suspect it was the coconut that made it thicker and more “porridgy”.  At any rate, this first experiment was a grand success.  I do hope to pick up some chia seeds next time I’m at Sprouts.  This would also be delicious with the added flavor and health benefits of cinnamon.

AND, how can I forget to thank Monica for alerting me to the existence of PB2 Powdered Peanut Butter!  All the flavor, 85% less fat!
Got to try it.
