This will be the first in an ongoing series, where I share some of the items I have recently placed in my Pocket<\/a><\/strong> that I think might interest somebody else. Some of them I may have loved so much that I shared them on Facebook, while others I just popped in there so I could keep track of them\u00a0for future reference. I use my pocket for articles and blog posts, recipes, product reviews, and “shtuff in general” that I like. So, without further ado, let’s see: What HAVE I got in my pocketses?<\/p>\n

From my Uncle Dave Johnson, who kindly posted this great recipe which is very similar to the Cocoa No-Bake cookies I grew up enjoying, but a much healthier version (and who doesn’t want a little more healthy in their life?). It is sorta like a chocolate oatmeal no bake cookie, but extra creamy and special. it almost reminds me of fudge, but with the added texture of the oats and occasional chewy sweetness of the dried cranberries–yumm!…<\/em><\/p>\n


\n1 cup natural peanut butter<\/strong>
\n 2\/3 cup raw honey<\/strong>
\n 1\/2 cup coconut oil (no substitutes, this is what gives its creamy texture and flavor)<\/strong>
\n 2 cups oats (not instant)<\/strong>
\n 1 1\/4 cups mini chocolate chips<\/strong>
\n 3\/4 cup dried cranberries<\/strong><\/span><\/p>\n

In a medium sized saucepan, melt together peanut butter, honey and coconut oil.<\/em>
\n Remove from heat and add oats, chocolate chips and dried cranberries. Stir until combined and chocolate chips are melted.<\/em>
\n Spread into a 9×13 pan. Refrigerate until hardened, about an hour. Store in refrigerator…<\/em><\/p>\n

When this movie came out in the theaters, I went to it with my brother Jeff and some other peeps. He got it right away. I did not. That’s why I LOVE this article by Kathryn W. at Love Among the Ruins<\/strong> so much… I’m rarely this<\/em> wrong about a movie, so it’s great to be able to offer a big, fat, public “Mea Culpa!”<\/strong><\/em><\/p>\n
